Easy Vegan Applewood Mac & Cheese

Macaroni cheese is one of our favourites, but it's even better when you find a nice dairy-free plant-based cheddar that melts really well. Thanks to VBites and Heather Mills for creating this amazing product.

INGREDIENTS
Three Tbsp Vegan Butter
Three Tbsp Plain Flour
Three Cups Plant Milk
One block of Applewood Cheese
One and a Half Tbsp Mustard
400g Macaroni
Chopped Chives

INSTRUCTIONS
Preheat the oven to gas mark 6
Start by grating the cheese and placing to one side.
In a saucepan, cook the macaroni as per the cooking instructions on the packet.
On a low heat, melt the butter in a pan and add the flour.
Whisk until a paste is formed and the mix leaves the bottom of the pan.
Cook for a further two minutes to allow the flavour of the flour to go.
Add a splash of milk to loosen the mix. Add the rest of the milk and continue mixing quite vigourously until the mix becomes thick like a cream (turning into a bechamel). It may take some time, be patient.
Once the bechamel sauce has thickened, add the cheese a handful at a time and stir until it melts before adding more. Remember to save some to sprinkle on top.
Add the mustard and mix.
Stir in the cooked macaroni and using a large spoon, coat the macaroni with the cheese sauce.
Transfer to an oven-proof dish and flatten with the back of your spoon.
Sprinkle the remainder of the cheese on top and oven bake for 20 minutes or until the cheese is nice and melted.
Serve with a sprinkle of fresh chopped chives.
