Pineapple Mango Lemonade Recipe

How To Pick Out A Pineapple
1. Look at the color: you want it to be more yellow and not a dark green
2. Smell the bottom of the pineapple: it should smell like a sweet pineapple
3. Weight: It should be heavy for its size.
4. Give it a squeeze: It should give a little and not be rock hard.

Ingredients:
1 ripe pineapple, ends cut off, sides trimmed, cut in half lengthwise, core removed, cut into chunks
1 mango, peeled, deseeded and cut into chunks
1 cup of fresh squeezed lemon juice, about 5 to 7 lemons depending on size
2 cup of water, divided
½ cup sugar
1 cup of water

Directions:
In a small saucepan combine 1 cup of water and ½ cup of sugar. Heat over medium heat and stir until the sugar dissolves and the water looks clear. Set aside to cool.

Place the cut up pineapple and mango into a blender and add 1 cup of water. Blend on high speed until it is completely smooth. Pour the juice into a strainer over a large bowl. Stir the juice with a spatula until the juice has been strained of its pulp

Add 1 cup of lemon juice to the pineapple/mango juice plus the simple syrup (the sugar that was dissolved into 1 cup of water). You can add as much or little of the simple syrup as you like it sweet.

Chill the juice completely in the refrigerator for at least 1 hour before serving. To serve it up, fill your glass with ice and pour in the juice. Add a wheel of lemon on the rim if you like. I added a piece of pineapple on a decorative toothpick also. Enjoy this delicious tropical lemonade this summer!
