Homemade Rustic Phyllo Pastry
Preparing and rolling out phyllo pastry for recipes such as kolokithopita and tiropita.
4 c flour
1/2 t salt
3 T olive oil
2 c warm water, or as needed
Mix the flour, salt and oil together and gradually add enough water to make a soft, pliable and non-sticky dough. Knead until smooth and elastic. Cut into 3, flatten into a disk, cover with plastic wrap and chill at least two hours, or overnight is best. May also be frozen.
