Hereby we present a special concept of natural icecream making from wild mangoes. Today we are with Mr Suhas, who supplies 10-12 natural flavors of icecreams for functions. He makes icecream without any chemicals, but by using a machine. Special natural icecreams available here are black plums, wild mangoes, jack fruit, areca, dragon fruits etc. First step is to extract fruit pulp. Here he says a condition that even a drop of water added distroys the creamy texture of icecream and it leads to crystal structure. Then mixing of boiling milk with milk powder- sugar mixture is followed. This mixture is kept for cooling, then freezed. Next day the icecream base which is freezed is put into machine in which the mixture is cooled and beated at a time. Finally the icecream is stored in freezer in boxes. Here we gave an idea how to make homemade icecream. It can be made simply by using milk, sugar and arrowroot powder/ corn flour. Mixture is boiled and freezed, beated with mixi. If this process is followed for atleast 5 times, icecream with creamy texture will be ready.
