Dahi Baingan | Your New Comforting Meal | दही बैंगन

Trust us when we say this Dahi Baingan is going to steal the show at your table!
Creamy, tangy, and with all the right flavours, this dish is a total crowd-pleaser.
Serve it with hot chapatis or rice and watch it disappear in no time!

Ingredients:
- 2 tbsp mustard oil
- 300g brinjal (eggplant)
- 1/2 tsp chili powder
- 1/8 tsp turmeric
- Salt to taste
- 1 tsp panch phoran (mustard, cumin, fennel, fenugreek, nigella seeds)
- 1 tsp curry leaves
- 2 dry chilies
- 1 tsp cumin powder
- 1 tsp jaggery powder
- 1 cup yogurt/curd (dahi)
- Salt to taste

Tadka:
- 2 tsp mustard oil
- 1 tsp Kashmiri red chili powder

Instructions:
1. Wash and cut the eggplants (baingan) into halves.
2. Heat oil in a pan, add the eggplant, and sprinkle turmeric, red chili powder, and salt. Toss well.
3. Cook for 3-4 minutes until the eggplants start softening.
4. Add panch phoran, dry chilies, curry leaves, jaggery, and cumin powder. Cover and cook, stirring occasionally, until the eggplant is fully cooked.
5. In a separate bowl, mix yogurt, salt, and jaggery.
6. Add the yogurt mixture to the cooked eggplant and stir well to combine.
7. For the tadka, heat mustard oil in a small pan. Once hot, turn off the heat and add Kashmiri red chili powder. Immediately pour this tadka over the eggplant mixture.
8. Stir well and serve with hot steamed rice.
