Ingredients
Base
● 1 can (400 g) chickpeas, rinsed and drained
● 3 tbsp smooth peanut butter
● 2 tbsp olive oil
● 4–6 tbsp ice cold water
Thai Aromatics
● 1 tbsp lemongrass (very finely chopped or paste)
● 1 tsp fresh ginger, grated
● 1 small garlic clove
● 2 green onions
Thai Flavor Elements
● 21⁄2 tbsp lime juice
● Zest of 1 lime
● 2 tbsp sriracha or Thai chili sauce
● 1 tsp soy sauce
● 1⁄2 tsp brown sugar or palm sugar
Herbs
● 1 handful fresh cilantro leaves
● 6–8 Thai basil leaves (optional but amazing)
Texture
● 2 tbsp roasted peanuts, crushed
● Salt to taste
Blend
1. Add chickpeas, peanut butter, olive oil, lemongrass, ginger, garlic, lime juice, lime zest, soy sauce, sriracha, and sugar to the blender.
2. Add cilantro, Thai basil, and green onions.
3. Blend while slowly adding ice water until very smooth.
4. Taste and balance:
○ More lime → brighter
○ More soy → deeper umami
○ More sriracha → more heat
- Fold in crushed peanuts after blending.
Thai Coconut Soy Paneer
Ingredients
● 250 g paneer, cut into bite-sized cubes
● 1 tbsp soy sauce
● 4 tbsp coconut milk
● 1 tbsp ginger-garlic paste
● 1 tsp rice vinegar (or regular vinegar)
● Salt to taste
● 1 tsp toasted sesame seeds
Method
1. In a bowl, mix soy sauce, coconut milk, ginger-garlic paste, vinegar, and a pinch of salt.
2. Add paneer cubes and toss gently to coat. Let it marinate for 10–15 minutes.
3. Heat a pan and lightly sear the paneer until golden and slightly caramelized.
4. Finish with toasted sesame seeds.
Thai Mango Salad
* 1/2 cup Cilantro
* 1 Cucumber
* 2 Mango, medium unripe green
* 1/4 cup Mint
* 1/4 cup Peanuts, roasted
* 1 Red bell pepper
* 1/2 Red onion
* 1 Shallots, fried
* 1 Thai chilli pepper, red
Condiments
* 3 tbsp Lime juice, fresh
* 1 tbsp Thai sweet chili sauce
* 1 tbsp Brown sugar, packed
Method:
1. Make the dressing.
2. Add all the chopper ingredients in a mixing bowl. Add dressing and mix.
Assembly – Thai Hummus Toastie
Ingredients
● 1 soft sub roll, sliced horizontally
● Spiced butter (butter + pinch paprika + garlic powder)
● Thai peanut hummus
● Thai coconut soy paneer cubes
● Pink pickled onions
● Microgreens
● Edible flowers (for garnish)
Method
1. Spread spiced butter on the inside of the sub roll and toast until golden and crisp.
2. Pipe the Thai hummus generously using a star nozzle for a textured look.
3. Arrange the warm Thai paneer cubes over the hummus.
4. Top with pink pickled onions.
5. Finish with microgreens and edible flowers.
6. Serve with salad on side
