Pork Vindaloo- Pork Curry

There’re many versions of this delusions pork curry, cooked and tasted by many individuals all over the internet. This specific version is simple, easy to make and blasting with flavours.
Ingredients

Serves for two.

4 cloves garlic
15 g fresh ginger
2 red chillies, seeded
1 tsp mustard seeds
1/2 tsp fenugreek seeds
1/2 tsp turmeric
1/2 tsp ground cumin
2 tbsp white wine vinegar
2-3 tbsp oil
1 onion, finely chopped
115 g tomatoes, peeled and chopped 500 g of shoulder or belly of pork, trimmed
and cubed
salt
300 ml boiling water
4-6 curry leaves
3 cloves
2.5 cm cinnamon stick
1 tsp sugar
Preparation

1. Chop 2 cloves garlic with half the ginger, and blend with the chillies, mustard seeds, fenugreek seeds, turmeric, cumin and half the vinegar.

2. Heat the oil, add the chopped onion and fry until translucent and soft.

3 . Add the spice paste, cook gently for 15 minutes.

4. Add the tomato and continue to cook, mashing it under the back of the spoon to make a paste.

5 Add the pork and fry for 5 minutes.
6. Add 1/2 tsp salt & Pepper, pour on the boiling water Simmer, covered, for 40 minutes, until the pork is tender.
7. Add remaining garlic and ginger and add with the curry leaves, cloves and cinnamon stick Cook for 5 minutes.

8. Add the sugar and remaining vinegar. Add salt to taste.
