Crispy Old-Fashioned Potato Pancakes

Ingredients:
- 4 medium potatoes, peeled and grated
- 1 small onion, grated
- 2 eggs
- 1/4 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- Vegetable oil for frying
- Butter for serving
Instructions:
1. Place grated potatoes in a clean towel and squeeze out as much liquid as possible.
2. In a large bowl, combine potatoes, onion, eggs, flour, salt, pepper, and garlic powder. Mix well.
3. Heat a thin layer of oil in a skillet over medium heat.
4. Scoop about 1/4 cup of mixture into the skillet and flatten into pancakes.
5. Cook for 3–4 minutes per side until golden brown and crispy.
6. Transfer to a paper towel-lined plate. Repeat with remaining mixture.
7. Serve hot with a small pat of butter on top.
Serving:
Serve with sour cream, applesauce, or fresh herbs for extra flavor.
Tips:
- Add shredded cheese for a cheesy version.
- Keep cooked pancakes warm in the oven while frying the rest.
