Hi friends! Today, I'm here with an incredibly delicious and nutritious dish: Ash-e Tarkhineh. This soup, with its amazing taste and numerous health benefits, is the perfect choice for fighting colds and boosting immunity! 🔴 Ingredients for Ash-e Tarkhineh:
- Dried Tarkhineh: 250 grams
- Chickpeas: 1 cup
- Pinto beans: 1 cup
- Lentils: 1 cup
- Herb mix (leek, parsley, coriander, spinach): 500 grams
- Onions: 2
- Garlic: 2 cloves
- Dried mint: 2 tablespoons
- Salt, pepper, turmeric: to taste
🔴 Instructions:
Soak chickpeas and pinto beans overnight, then cook them.
Soak dried tarkhineh in some water to soften it.
Dice the onions and garlic and sauté them until golden.
Add the tarkhineh, cooked legumes, and water to the pot.
Add the chopped herbs, salt, pepper, and turmeric, and let it cook until the soup thickens.
Finally, add dried mint and turn off the heat after a few minutes.
