Probiotic Lemon Soda | Fermented Lemonade | Enzymatic Cleaners
This delicate and refreshing naturally fermented soda is loaded with probiotics to improve digestion. After it is finished fermenting it will have a fizzy texture and be slightly sweet. After tasting, you should add honey or stevia to taste before move to the fridge.
Ingredients
• 2 lbs. lemons, (1 cup lemon juice)
• 3/4 cup sugar (feed bacteria)
• 1 cup ginger bug (any culture will do such as whey, kombucha, water kefir)
• 2 quarts water (chlorine free) (8 cups)
• Optional: Sweetener of your choice like raw honey or stevia after done fermenting
• My lemon had a good amount of lemon juice around 1 1/4 cup so I add more water 2 cups
Instructions
1. Heat 1 cup of water just enough to dissolve sugar and let it cool completely
2. Add sugar mixture, lemon juice, ginger bug into the rest of water.
3. Strain & Fill up your bottles 2/3 full to allow room for gas expansion.
4. Let them sit at room temp. to carbonate for 2-4 days until it reaches your fizzy level. The longer you let it fermented the more sugar will eat up by the ginger bug.
5. If you still want it to taste sweet in the final soda then you should add your choice of sweetener before transferring to the fridge to slow fermentation. They will keep in the fridge up to 1 month. Serve chilled. Enjoy!!!
* Temperature here around 68 f or 15 c
A cooler room will slow fermentation while a warmer room will speed it up.
