We're Baking Some Traditional German Christmas Biscuits | Vlogmas Day 7

Christmas isn't just all about going out and about visiting as many markets as possible, we wanted to show you another traditional side of a German Christmas, baking biscuits.

As you will see we make many many biscuits...but as it's Christmas it is obviously not enough.

Baking also takes a long long time to do properly, much longer than we had realised in the beginning and it actually took us two attempts over two days to fully complete everything.
But the end result, as you will see, was well worth the effort; even if they didn't last half as long as it took to make them.

We hope you enjoy this different Vlogmas video, we really did want to show you the other side of Christmas.

Recipes:

VANILLEKIPFERL (the ones that took us two days)

INGREDIENTS FOR 70 PIECES:
200g flour
80g sugar
175g cold butter
2 egg yolks
100g almond powder
Vanilla extract or 2 packs of vanilla sugar
A pinch of salt
10 packs of vanilla sugar for later

Put all the ingredients in a bowl (except the 10 packs of vanilla sugar) and whisk using dough hook attachments.
Afterwards use your hands to form it into a ball of dough.
Roll into two long rolls and wrap in cling film.
Put in the fridge for at least a minimum of 2 hours.
Heat the oven to 180°C or 160°C for a fan oven.
Take one roll at a time from the fridge and cut each into 35 pieces.
Make every piece into a ball and then into a 5 cm roll with ends tapered into a point.
Shape them into horseshoe/crescent moons and put them onto baking a baking paper covered baking tray.
It is important to keep the dough cool. If it has warmed up whilst making the shapes, cool them in the fridge again.
Bake them for 15 minutes. The colour won't change.
Put the extra vanilla sugar in a bowl or deep plate.
Take the kipferl off the tray when they are still warm and use 2 teaspoons to cover them in sugar.
Be careful as they are very fragile.
Put them on a rack to cool down.

MAKRONEN: (Coconut or nuts)

INGREDIENTS FOR 18 PIECES:
2 egg whites
150g sugar
1 tbs lemon juice
200g coconut flakes or nut powder
18 round wafers (not necessary)

Pre-heat the oven to 150°C.
Put the egg whites in a mixing bowl and whisk until solid/stiff.
Slowly keep adding the sugar and lemon juice whilst whisking.
Afterwards carefully lift the coconut flakes or nut powder in.
Put the wafers on a baking tray.
Use 2 teaspoons to put the mixture into small heaps on the wafers.
(For coconut ones you can make a quenelle and put them straight onto the baking paper).
Pre-heated oven at 150°C and put in for 30-35 minutes.
You can tell they're done when the surface isn't squishy but solid. Don't push too hard though.
When done put on a rack to cool down.

SPRITZ BISCUITS

INGREDIENTS FOR 40 PIECES:
100g powdered sugar
200g soft butter (not cold and very soft)
2 tbs milk
1 egg
1 packet of vanilla sugar
A pinch of salt
250g flour

Put the powdered sugar and butter into a bowl and whisk until creamy.
Slowly add the milk, egg, vanilla sugar and the salt and keep mixing.
Lift the flour under the dough.
Put in the pastry/piping bag with a big star opening.
Make shapes on a baking tray like an 'S', a stripe, circle or whatever you fancy.
As ours melted a little you should let it rest before putting in the oven.
Heat the oven to 200°C or 175°C for a fan oven.
Bake for 10-12 minutes.
Take them out and let them cool down on the rack.
When they're cold dip the ends into some melted chocolate.
