In-N-Out Smash Burgers & Fries
Cooking time: 1 hour (plus 2 or more hours of inactive time)
Serves: 2

INGREDIENTS:
For the french fries
2 large russet potatoes, washed
Lots of vegetable oil, for frying

For the hamburgers
1 large tomato
1/2 white onion
4-5 leaves of butter lettuce
Sliced pickles
2 slices American cheese
8 oz 80% ground beef
2 hamburger buns
Mustard, ketchup, mayo, and other condiments as desired
INSTRUCTIONS:
Make the Fries
1. Cut the potatoes in half, then slice into 1/4" slices, then slice those into 1/4" sticks. To keep them from oxidizing, put them into a bowl and cover them with cool water (optional: add 1 tablespoon white vinegar to one gallon water to slow the oxidation process further and remove the starchiness from the potatoes). Put the bowl in the refrigerator and chill for 3-24 hours.

2. When the potatoes are ready, remove them from the water and dry them in a salad spinner. Captain’s Note: If you don’t have a salad spinner handy, dry them thoroughly in a clean kitchen towel. Lay them out over paper towels & pat dry.

3. While the potatoes rest, heat a few inches of oil in a pot to 300 degrees. You will need a fryer or candy thermometer to ensure your oil isn’t too hot or cool. In 3-4 batches, cook the potatoes until just cooked through and soft, without browning or changing the color on the outside, about 3-4 minutes.

4. Remove the fries from the oil and lay them on a cooling rack over a baking sheet covered in paper towels. Once all batches are cooked and on the cooling rack, move the baking sheet to the fridge to allow the fries to chill.

5. Meanwhile, prepare the ingredients for your burgers by thinly slicing the tomato and onion, tearing the butter lettuce into large chunks (can lettuce be a chunk? A slab?), and removing the pickles you want from the jar.

6. Put a cast iron or other heavy bottomed pan on the stove and heat on high (Captain’s Note: Don’t use nonstick if you can avoid it - it won’t get as charred and tasty.) While the pan heats up, divide the ground beef into four 2-ounce chunks and roll into balls. Wrap the bottom of a small pot or pan with aluminum to use your smasher.

7. Pour about half a tablespoon of oil into the hot pan and wipe it around quickly with a paper towel. Place one ground beef ball into the pan and use the foil-covered pot to press it down immediately. You may want to have an oven mitt available if the pot gets hot. Lift the pot and sprinkle the burger with salt and pepper. Let the burger cook for 1-2 minutes, then scrape and flip, smashing it again for about 10 seconds. Remove the burger to a plate and lay a slice of American cheese over it.

8. Follow the same process for the next burger, then with burgers three and four, lay them on top of the cheesed burgers. Place them in a lightly warmed oven or the microwave to stay warm while you finish the fries. Turn down the heat of the pan and let cool for a couple minutes, then add the burger buns, inside down, to toast in the burger fat, until charred to your liking.

9. Pull the fries out of the refrigerator and reheat the oil to 375 degrees. Place the fries back in the heated oil for 2-4 minutes until golden and crispy. Drain the fries, place in a bowl, and toss with a sprinkling of salt.

10. Build your burger to your preference and serve with delicious In-N-Out style fries on the side.
