No Chew Food for Soft Food & Puree Diets: Shepherd's Pie
A "no chew" version of Shepherd's Pie for those on a soft diet or who just can't chew their food.
For meat mixture:
2 Tbs olive oil
1/2 medium onion, chopped
1/2 carrot, chopped
1/2 lb ground beef
salt & pepper to taste
2 tsp Worchestershire sauce or Bragg's Liquid Aminos
Small handful of frozen english peas.
Saute onion & carrot in olive oil until tender (2-3 minutes);
Add ground beef & brown; drain excess grease;
Add salt & pepper to taste;
Add Worchestershire or Braggs;
Add peas & heat through;
Puree meat mixture in food processor and set aside while you make the gravy.
For Gravy:
2 Tbs butter
2 Tbs flour
salt & pepper to taste
1 cup milk or Half & Half
Melt butter in saucepan
Add flour and whisk to keep it smooth
Add salt & pepper
Continue whisking while you add 1 cup milk or cream
Add gravy to meat mixture & stir to combine.
For mashed potatoes:
1 large Russet potato, peeled & cut into chunks
1 Tbs butter
salt & pepper to taste
Enough milk to get smooth consistency
(You can make the potatoes ahead of time.)
Boil potatoes until soft; drain;
Add butter, salt & pepper;
Add a little milk & use potato masher or electric mixer to mash potatoes while adding remainder of milk.
Spread meat mixture in baking dish & top with mashed potatoes;
Sprinkle with sweet paprika & bake at 350 degrees for 15-20 minutes.
