MALA Xiang Guo in Mandarin Chinese means Numbing and Spicy Aromatic Pot. It is a spicy stir-fried vegetables and meat dish. The main seasoning ingredient is Szechuan chili oil which gives the numbing sensation. It has a more intense flavor than most other Chinese stir-fry.

INGREDIENTS
8 oz. (225 g) beef
Marinade for beef:
1 tbsp Shaoxing wine
1 tbsp soy sauce
2 tsp cornstarch
2 tsp sesame oil
One segment, approx. 5 inches (12 cm) lotus root
One oz (28 g) wood-ear mushrooms
One carrot
One bunch mustard green
One thumb-sized ginger
2 cloves garlic
Stir-fry sauce:

2 tbsp peanut oil
1/3 cup (45 g) beef stock
1 1/2 tbsp soy bean paste
1 tsp sugar
1 tbsp Shaoxing wine (or any rice wine)

Dry red chili - whole
Roasted peanuts
Sesame seeds
