Steamed Glutinous Rice with Chicken and Shiitake Mushrooms - a Chinese Dim Sum Recipe 糯米鸡

Steamed glutinous rice with chicken is a popular tea time favorite. Besides chicken, other meats such as Chinese sausage, BBQ pork, and dried shrimp are added. It’s packed with umami flavor and makes a delectable dish.

A popular way to cook the dish is steamed in bowls and then turned up-side down and served on a plate. In Southern China, it’s often served in lotus leaves.

INGREDIENTS:
2 1/2 cups (500 g) glutinous rice
1 pound (450 g) chicken thighs
3 links Chinese sausage
6 oz (170 g) Chinese BBQ pork
2 oz ( 56 g) dried shrimp
10 Shiitake mushrooms
4 shallots
2 tablespoons vegetable oil
3 cups (720 ml) water
SEASONINGS:
2 tablespoons dark soy sauce
2 tablespoons light soy sauce
2 tablespoons oyster sauce
2 tablespoons Shaoxing wine
1 tablespoon sesame oil
1 teaspoon white pepper
1 teaspoon salt
MARINADE:
1 tablespoon Shaoxing wine
1 tablespoon light soy sauce
1 tablespoon corn starch
