Past Night! 🍝 How to Make Authentic Carbonara | Anna Victoria

INGREDIENTS:
For 4-6 people
Choice Pasta
10 eggs
200g pecorino
50g parmigiano
300g Pancetta
200g Guanciale
(or 500g total of one or the other)
Salt
Black Pepper
INSTRUCTIONS:
Step 1
- Add 10 egg yolks, 100g pecorino, and 30g parmigiano to a mixing bowl
- Mix well
-Add a little bit of Black Pepper
Step 2
- Prepare the Pancetta and/or Guanciale
(You can choose one or the other, or both)
- Cut 300g Pancetta into pieces
- Cut 200g Guanciale into pieces
- Cook on medium heat
- Stir often
- Once done cooking, remove Pancetta and Guanciale from pan, leaving as much of the fat/grease in the pan as possible
*Cooking time depends on amount and size of the meat - it took us 5 minutes. Cook until done to preference, but don’t burn it + stir often
Step 3:
- Add salt to pasta water, let water boil.
- Cook pasta halfway (refer to cooking time on label) and then finish cooking the pasta in the pan with the fat/grease
Step 4:
- Add some pasta water to the pan with the fat/grease to help make the sauce creamy
- Add half-cooked pasta to the pan
- Mix the pasta with the grease
- Add more pasta water
- Continue mixing and stirring
Step 5:
- Add the cheese + yolk sauce
- Add the Guanciale + Pancetta
- Add more pasta water on the pasta
- Mix and continuing to stir
*Amount of pasta water needed will depend on the amount of pasta and sauce. If the sauce is sticky, then add more pasta water.
Step 6:
