🔹 Ingredients:
290 g water
7 g salt
5 g dry yeast
350 g bread flour (13%)
20 g olive oil (optional)
Add the dry yeast to the room-temperature water
mix well and leave for 15 minutes until foamy.
In a separate bowl, combine the bread flour and salt.
Mix the dry ingredients.
After 15 minutes
pour the yeast mixture into the flour.
Mix, then add the olive oil
and continue mixing until fully incorporated and no dry flour remains.
Cover and let the dough rest for 30 minutes.
After 30 minutes, stretch and fold the dough from all sides
then gently round it.
Cover and rest for another 30 minutes.
After 30 minutes, stretch and fold the dough from four sides.
Transfer it to a clean container lightly greased with oil (olive or vegetable).
Cover and let the dough rise for 1 to 1½ hours, until doubled in volume or more.
Once the dough has risen, generously flour the dough and the work surface.
Turn the dough out onto the surface
divide it into 4 equal piece
and transfer them to a baking couche or a kitchen towel.
Cover and rest for 1 hour.
While the dough is resting, preheat the oven to 480°F (250°C).
Transfer the ciabatta loaves onto parchment paper.
Bake at 465°F (240°C) for 15 minutes with steam (pour about 100 g of boiling water into a preheated lower tray)
then bake for another 15 minutes without steam.
