Mango, Sticky Rice & Coconut Crepe Cake 🥭🥥🍚🥞🍰
A tropical twist on a classic crepe cake, layered with fresh mango, coconut sticky rice, and fluffy whipped cream. Perfectly sweet and refreshingly light!

🥞 Crepe Ingredients
* 3/4 cup all-purpose flour
* 1 1/2 cups milk
* 3 large eggs
* 2 1/2 tbsp sugar
* 4 tbsp melted butter
* 1/2 tsp salt

🍰 Filling Ingredients
* 300 ml chilled heavy cream
* 150 g mascarpone cheese
* 1/3 cup sweetened condensed milk
* 8 small ripe mangoes, thinly sliced
* Coconut sticky rice (see recipe below)
* Coconut cream (for drizzling)
For Sticky Rice & Coconut
Fragrant sticky rice with creamy coconut flavor—essential to this cake’s tropical layers.
🍚 Sticky Rice Ingredients
* 1 cup Thai glutinous (sweet) rice
* 1 cup water
* One 1/4 cups full-fat unsweetened coconut milk
* 1/4 cup sugar
* 1/8 tsp salt
🥥 Salted Coconut Sauce
* 3/4 cup full-fat unsweetened coconut milk
* 1/8 tsp salt
* 1 tbsp and half tbsp of sugar
* 1 tsp cornstarch + 1 tsp water
Instruction
Make the Crepe Batter
* In a bowl, whisk together flour, milk, eggs, sugar, melted butter, and salt until smooth.
* Strain to remove any lumps.
* Cover and refrigerate for 1 hour to rest.
Cook the Crepes
* Heat a non-stick skillet over medium heat. Lightly grease with butter or oil.
* Pour about 1/3 cup of batter into the pan, swirling to coat.
* Cook each crepe until set and slightly golden.
* Cool completely before layering.

Prepare Sticky Rice: Rinse sweet rice and cook in a rice cooker with 1 cup water, or microwave with 1 cup water, stirring every 5 minutes. Added more water if needed.(Cooking total time in the microwave for ten minutes.)
Make Sweet Coconut Sauce: Mix coconut milk, sugar, and salt. Microwave for 1 minute, stirring until sugar dissolves.
Combine Rice and Sauce: Once rice is cooked, mix with sweet coconut sauce and let it absorb for 10 minutes.
Prepare Salted Coconut Sauce: Whisk coconut milk, salt, sugar, cornstarch, and water. Microwave for 1 minute, stirring until thickened.
Prepare Mangoes: Peel and slice mangoes into thin strips or chunks.
Whip the Cream
* Beat chilled heavy cream, mascarpone, and sweetened condensed milk until stiff peaks form.

🍰 Assemble the Crepe Cake
1. Place one crepe on a serving plate. Spread a thin layer of whipped cream.
2. Add mango slices. Top with another crepe.
3. Repeat layering with cream and mango slices.
4. Every few layers, add a layer of coconut sticky rice, mango slices, and a drizzle of coconut cream.
5. Continue layering until all crepes are used. Alternate between cream/mango and sticky rice layers. Make sure you have enough for the final layers of sticky rice and mango (Tip: I did 2 sticky rice layers, and the rest were cream + mango!)
6. Finish with a final layer of sticky rice and mango slices arranged in a rose pattern. 🌹
7. Chill in the fridge for at least 1 hours before slicing.
