Amaretti Biscuits 🍪
These irresistible amaretti biscuits are crisp on the outside and soft and chewy in the center. Perfect for serving at an afternoon tea or as a sweet treat with coffee!
Ingredients:
* Zest of 2 large lemons
* 120g caster sugar
* 200g ground almonds
* 2 medium egg whites
* 2 tbsp almond liqueur (like amaretto, optional)
* 5 tbsp icing sugar, plus extra for dusting
Method:
1. Rub lemon zest into the caster sugar. Set aside 2 tbsp of this mixture. Stir ground almonds into the rest.
2. Whisk egg whites until stiff peaks form. Gradually whisk in the reserved lemon sugar.
3. Mix half the egg whites and almond liqueur (if using) into the almond mixture. Fold in the rest of the egg whites. Chill for 1 hour.
4. Preheat oven to 190°C (170°C fan/gas 5). Line two trays with parchment. Roll dough into 12 balls.
5. Roll balls in the mixture and place 2 cm apart on trays. Dust with extra icing sugar and bake for 13-15 minutes until golden. Cool on trays for 10 minutes, then transfer to a wire rack.
