Red Velvet Sandwich Cookies
Ingredients

Cookies:
* 2 boxes Betty Crocker’s Red Velvet cupcake mix
* 4 eggs
* 2/3 cup oil
Frosting:
* 8 ounces cream cheese
* 1/2 cup butter
* 2-3 cups powdered sugar
* 1 Tablespoon vanilla extract

Instructions
⠀⠀⠀⠀
- Preheat oven to 350°F.
- Line a baking sheet with parchment paper and set aside.
- Combine the cake mix, eggs and butter together in a bowl
- Roll dough into a ball and push flat on the pan.
- Bake for 6-8 minutes, and allow to cool
- In a separate bowl, beat your cream cheese and butter until smooth
- Add in powdered sugar and extract and mix
- Frost the inside of one cookie, and squish another cookie to form a sandwich
