Here’s a simple and quick 2-minute Mor Kulambu (also known as Buttermilk Curry), a popular South Indian dish. This recipe is for when you need something flavorful and quick to prepare.

Ingredients:
1 cup plain yogurt (curd)
1 cup water
1-2 green chilies, slit
1 small onion, chopped (optional)
1/2 tsp ginger-garlic paste (optional)
1/4 tsp turmeric powder
1/2 tsp mustard seeds
A pinch of hing (asafoetida)
A few curry leaves
1/4 tsp black pepper (optional)
Salt, to taste
1 tsp oil (preferably coconut oil)
Instructions:
Prepare the yogurt mixture: In a bowl, whisk together the yogurt and water to make a smooth buttermilk.
Heat the pan: Heat oil in a pan on medium heat. Add mustard seeds, and let them splutter. Then add curry leaves, green chilies, and onions (if using). Sauté for 30 seconds.
Add seasoning: Add a pinch of hing and turmeric powder. Stir well.
Pour in the buttermilk: Reduce the heat to low, and add the buttermilk mixture to the pan. Stir gently.
Simmer: Let the mixture simmer for 1-2 minutes, ensuring it doesn't boil over.
Adjust seasoning: Add salt to taste and black pepper if desired. Give it one final stir.
Serve: Garnish with fresh coriander leaves (optional) and serve hot with rice.
This Mor Kulambu is tangy and soothing, perfect for a quick meal. You can also enjoy it with steamed rice or even as a side with dosas or idlis.
