Content: 如何自製鹵水汁Homemade Chinese Marinade
材料有薑,蒜頭,蔥頭,桂皮,八角,香葉,丁香,花椒Ingredients are ginger, garlic, onion bulbs, cinnamon, star anise, myrcia, cloves, Chinese prickly ash
如果你喜歡, 亦可以加入陳皮If you like, you can also join the tangerine peel
用少許油, 首先炒薑,蒜頭,蔥頭With a little oil, first stir ginger, garlic, onion bulbs
其他香料, 需要用清水沖洗, 然後加入一起炒Other spices, need to be rinsed with water, then add together and fry
不要炒太久, 否則會有苦味Don't fry for too long, otherwise there will be bitterness
加一湯碗水Add a big bowl of water
加兩杯生抽 Add 2 cups of light soy sauce
加半杯老抽 Add half cup of dark soy sauce

加一杯紹興酒Add a cup of Shaoxing wine

也可以用片糖代替冰糖 You can also use brown sugar instead of rock sugar.
煮沸以後, 把鹵水過濾出來, 冷卻後放入冰箱 After boiling, filter out the Chinese Marinade, cool it and put it in the freezer.
需要用的時候, 再把他煮沸, 然後加入其他材料例如肉類,雞蛋 When you need it, re-boil it, then add other ingredients such as meat, eggs.
