Classical Mooncake, Cantonese style 【4K sub】
Mooncake Ingredients:(9 X 63g mooncakes)
Dough: (18g each)
Honey:68g
oil:20g
baking soda: 0.5g (0.5ml)
water: 2ml
All-purpose wheat flour: 80g
Fillings: (45g each, including egg yolk and paste)
9 salted duck egg yolks
sweetened lotus nut paste 290g (no oil)
oil 40ml
Oven temperatures:
preheat oven to 180°C, bake for 5 minutes
brush egg liquid, then 165°C bake for 10 minutes
* Each mooncake contains 70-80% filling
* For 50g mold, use 15g dough and 35g filling
