In this recipe video I’ll be showing you how to prepare Memelas. Made using instant corn masa and toasted over a comal/griddle. This prehispanic recipe is versatile as far as toppings. Ingredients
masa:
2 1/2 cups instant corn masa (yellow Maseca)
½ teaspoon salt
2 cups warm water (add gradually as shown in the video)
 
Beans
2 Tbs oil (Canola)
1 can beans or 1 cup cooked beans
1 serrano or Jalapeño
1/2 chopped onion
1/2 tsp salt (to taste)

 Salsa
2 roasted Roma Tomatoes
4 Chiles de árbol
3 roasted garlic cloves
1/2 Serrano or Jalepeño
1/2 tsp Salt

Other ingredients used
Egg
Asientos or bacon fat drippings (views chili oil or chorizo will work)
Queso fresco, cotija or cheese of choice

To assemble de memelas:
asiento or bacon drippings (optional)
Beans
queso fresco or queso cotija (cheese of choice)
salsa
Egg
