潮州韮菜菜粿|不是潮州人也爱吃的菜粿 | Chai Kueh (a Chinese food with chives filling)

食材:
蒜头5辦切碎
蝦米200g切碎,这兩樣先炒香用
韮菜350g切碎
适量盐
适量鸡精
2汤匙油

粉團:
澄粉120g
木薯粉120g
盐半茶匙
350ml沸腾水

做法:熱鍋油先炒香蒜头,蝦米加入切碎的韮菜里 再加入盐,油,鸡精粉调味搅拌均匀备用

粉團做法:澄粉,木薯粉过筛加入半茶匙盐,350ml沸腾水冲入粉里边加边搅拌均匀后,盖上湿布静至15分钟后,加入兩汤匙油揉均匀后,分成每粒25g,这些份量可做24-25粒,按扁扞平圆形,包上馅料,对折按中間左右对折至三四折,整形就好了,用平圆的盘也可以压出圆形,包好全部后,放進蒸笼蒸18分钟,好了可以上桌享用了

Chai Guei / Chai Kueh is a type of Chinese food with chives or water chestnut as traditional filling. We also have yam, pumpkin and many types of creative filling nowadays.

Filling:
5 cloves of garlic (minced)
Dried Shrimp 200g (minced)

Chives 350g (minced)
a little bit of salt
a little bit of chicken stock powder
2 soup spoon of oil

Ingredients for skin:
120g non-glutinous flour / wheat flour / wheat starch
Tapioca starch / tapioca flour 120g
1/2 teaspoon of salt
350ml boiled water

Steps:
1 ) Fried garlic and dried shrimp till fragrance, put aside to cool it down
2) Add in minced chives, salt, oil, chicken stock powder
3) Mixed well and put aside

Steps for skin:
1) Sieve non-glutinous flour and tapioca flour into a bowl, add in salt, mixed well
2) Add in boiling water, mix evenly
3) Cover the bowl with wet cloth for 15 minutes
4) Add in 2 spoon of oil into batter, mix well.
5) Split into 25g of small balls, we will get about 24-25balls with this recipe
6) Flat the small balls within 2 pieces of clean plastics with rolling pin
7) Insert the chives mixture and start folding the skin
8) Fold towards middle from both side (please refer video for the exact way)
9) Steamed the chai guei for 18 minutes
