5 Ingredient Easy Lunch Meal Prep #mealprepmondays #mealprep

These Cajun Shrimp foil packets are becoming one of my favorite go to meal preps for when I’m limited on time and ingredients!

Here’s the recipe below: Don’t forget to tag me when you try this one!

Ingredients
1 lb shrimp
3 tbsp olive oil
Golden petite potatoes
Yellow Onion
4 tbsp Butter or Ghee
1 tbsp salt
1 tbsp pepper
3 tbsp cajun seasoning

Directions
.
Preheat the oven to 400 degrees.
Chop the potatoes and onions and place them into a large mixing bowl.
Add in the shrimp, olive oil and seasoning.
Mix together thoroughly.
Take your baking sheet and create four large foil bowls.
Place the mixture evenly into each bowl and top with 1 tbsp of butter on each separate bowl.
Place another piece of foil over the top and close on each side so no air can escape.
Place in the oven and cook for 25 minutes or until the potatoes are soft.
Take the pan out of the oven and remove the foil tops to let cool for 10 minutes.
Then, distribute each one into a meal prep container and enjoy throughout the week!
If you plan to microwave these, remember to remove the foil.
