I finally got a good enough recipe to make gnocchi raw and gluten free! I tried to make these for years and so many combos just didn’t work the way I wanted them too until now!

This combo of raw squash, sweet potato and coconut flour (the dried coconut fiber) as the main ingredients worked perfectly. Because there’s no gluten, each gnocchi is rolled by hand before it gets to the gnocchi board but it’s so worth it!

Just like traditional gnocchi, this is a meditative process and it’s one of those lazy weekend kind of recipes. I enjoy making these and REALLY enjoy eating them! The sauce reminded me of the tomato sauce when I visited Italy in my 20s.
