"Roasted Vegetable Terrine"

Fun cooking with clean & lean. This delightful recipe will leave satisfied with a smile. Using cauliflower to make the base just add to the uniqueness of this dish.

What you'll need
1 tbs butter
1/4 cup vegetable stock
2 tbsp olive oil
1 carrot cut into florets
1 bunch of broccolini ( or plain broccoli) trimmed
1 brown onion diced
2 cloves of garlic minced
2 celery stalk, chopped
1 cup of corn kernels
2 tbsp of chopped thyme, rosemary & parsley
1 cup of canned or roasted chickpeas
salt & pepper

Sorry, I forgot to push record the sautee part all you do is:

In a saute pan add
olive oil
onions, garlic
fresh herbs
Followed with celery, bell pepper, asparagus, carrots, and sautee for 3 minutes on high
Then separately saute the broccoli and then the corn.
we're not really cooking here just caramelizing the vegetable as they are cooking in the oven
