THE BEST CHEWY ITALIAN ALMOND COOKIES TO DIE FOR II SUPER DELICIOUS
CHEWY ITALIAN ALMOND COOKIES BEST RECIPE
- 2 egg whites
- 1/2 teaspoon lemon juice
- 2 and 1/4 cup sifted ground almond
- 1 and 1/4 cup icing sugar (powdered sugar)
- 1/4 teaspoon baking powder
- 1 tablespoon almond extract
- 1 teaspoon valencian orange extract or you can use vanilla
- 2/4 cups of icing sugar for coating or as needed.
Instructions:
1. Whip egg whites and lemon juice together with a stand or hand mixer until stiff peaks form.
2. Combine sifted ground almond , sifted icing sugar and baking powder.
3. Fold into egg whites in batches to keep some air in the egg whites. At this time it will form a pretty sticky dough, then it's time to add the almond and orange extract.
4. Using clean hands, roll dough into balls about 1 inch in diameter, then roll in powdered sugar until well coated. Shake off extra icing sugar.
5. Leave at room temperature for one hour or until the tops have dried out. after an hour pre-crack by squeezing gently the cookies, by doing so it will make them much prettier and beautiful white-gold contrast.
6. While cookies are drying preheat the oven to 300 degrees. When the cookies are ready, bake for 20 minutes. Cool and store in an airtight container. These are even better the next day day and are great with coffee or tea.
