COYOTAS Tortillas ll Top 100 Finalist for the 2021 Fedex Small Business Grant Contest

"Coyotas tortillas is a company that is passionate about growing, learning and improving by connecting and serving its community. We want to make the best gluten/grain-free handmade tortillas. “

My name is Janet Flores PAvlovich. Alfredo and I founded Coyotas Tortillas with a few things in mind: To create a business that makes the world a clean and healthy place for our community. To continue to improve our tortillas by studying Mexico's strong women who practice the traditional tortilla-making process. To make a tribute to the tortillas and tortilleras.
To grow and learn during the process. That’s our passion.

Inspired by San Diego and my home town Sonora, Mexico, we strive to make the best gluten/grain-free handmade tortilla for people with food allergies without sacrificing flavor and texture. It took months and many pounds of cassava flour to make a tortilla that we felt represented the tortillas that I grew up eating. As I studied how people made tortillas in Mexico, I realized that much of the rich flavor and texture of tortillas is lost when tortilla-making equipment is used. And when they add unnecessary ingredients or preservatives are added.

Coyotas Tortillas are handmade to order. All tortillas are made and packaged after orders are placed and shipped with a FedEx 2-day Express service shipping guarantee! FedEx has had a significant role in our e-commerce sales and it is a big part of our business.

Alfredo, JC and our small team do everything... and when I say everything, is everything ... we cook, clean, packaging, personally deliver to houses and retail, shipping, marketing, customer service, social media .. everything! And we love it .. “how you do one thing, you do everything” that’s why we always give our best with love, good vibes, and good attitude. Always smiling!

We have focused our efforts on creating a high-quality cassava tortilla that is gluten/grain-free and delicious for the past year. We are excited to announce that we are now ready to develop more tortilla products for our community, putting Coyotas tortillas in the hands of people looking for a tortilla that meets their dietary needs! We will use the FedEx small business grant to develop more recipes, grow our e-commerce business and most importantly grow our team of tortilleros to keep producing our handmade Coyotas tortillas.
