FULL WEEK OF DINNERS

💖Cheesy broccoli casserole-
2 cups shredded chicken (I like to use rotisserie or Tyson black pepper shown here)
1 bag (10oz) of frozen cauliflower rice
1 bag (10oz) of broccoli
1/4 cup of light mayonnaise
1 can cream of chicken soup (98% fat free)
1 and 1/4 cup fat free cheddar
3/4 cup of cornflakes
Preheat oven to 350. Microwave/thaw cauliflower rice and broccoli. Combine all ingredients except cornflakes. Pour into 9x13 baking dish. Crush and sprinkle corn flakes on top. Bake for 20-30 minutes.
4 points for 1/4th of the whole pan
💖Chili-
1 lb 96/4 ground beef
1/2 chopped onion
2 8oz cans tomato sauce
1 McCormick chili packet
1 can kidney beans (drained)
1 bag/or can of corn
Cook beef and chopped onion until fully cooked. Add the rest of ingredients. Simmer on stove on low or keep in crockpot on low for 3-4 hours.
4sp per 1 1/2 cups
Makes about 3 servings.
I usually double the recipe and it makes about 7 servings

💖Enchiladas-
1 10oz can Red enchilada sauce
-1lb 96/4 lean ground beef
-1 and 1/4 cups Fat free cheddar cheese
-1 point tortillas (ole extreme wellness or tumaros are my favs)
Fill each tortilla with 2oz lean beef, sprinkle of cheese and a spoonful of sauce...roll up and place in baking dish (put sauce in bottom of baking dish so tortillas don’t stick). Top with remaining sauce and cheese. Bake at 350 for 20 min. 3 points for 1, 7 points for 2 on blue
(Use chicken instead of beef for lower point chicken enchiladas)
