2 eggs

½ cup enchilada sauce
½ cup shredded cheddar
Optional: chopped green onions
Blend cottage cheese and eggs until smooth. Stir in the chicken, a little enchilada sauce, cheddar, and green onions if using. Spoon into greased muffin cups and top with a little extra sauce.
Bake at 375°F until puffed, golden on top, and set around the edges. Let them cool slightly before lifting so the cheesy center stays together.
