Welsh Cakes. A Traditionally Cooked Cake on a Griddle. First Made for Miners' Breakfast in Wales.

A traditional cake from Wales cooked on a griddle. It was first made for the coal miners who took these with them to have during tea breaks. These are not very sweet. Raisins, sultans, or currants are added for a little sweetness.You can add cinnamon or mace powder to give a suttle flavour. Like the English scones, the dough is not kneaded, just mixed well together. It is cooked for 3 to 4 minutes on each side. If you don't have a cast iron griddle or skillet, you can cook on a heavy bottom frying pan.
Ingredients:
Self-Raising flour 260 g. if you don't have self-raising flour, use all-purpose flour and add 2 tsp baking powder.
Fine granulated sugar 65
Raisins, sultanas, or currant 120 g
Large Egg 1
All spice or cinnamon powder or mace powder 1/2 tsp
Salt 1/4 tsp
Butter 113 g cold cut into cubes
Milk about 60 ml. Use only if required, a tablespoon at a time.
Caster sugar for dusting
You can replace the raisins with orange candied peel.
