Sopa De Mondongo

This is one of my favorite Soups. I love Mondongo as a soup or as a stew. Basically as a stew you can make it the same way just dont add so many root vegetables. Then let it reduce for the stew. But for the soup you want to keep it like the video. Remember in this video before adding the vegetables and spices make sure you have enough water. 8 1/2 Cups of water.
