Ulta Vada Pav With Ragda
Ingredients:
Ragda :
1+1/2 Cup - Dry White Peas
2 Cup - Water
1 tsp - Oil
1/2 tsp - Turmeric Powder
1 tsp - Salt
Pinch - Baking Soda
Coarse Green Masala
12-15 no - Green Chillies
1 inch - Ginger
7-8 no - Garlic Clove
Vada Masala
2 tbsp - Oil
1 tsp - Mustard Seeds
8-10 no - Curry Leaves Chopped
Pinch - Asafoetida
1/2 tsp - Turmeric Powder
4 no - Boiled Cut Potato
2 tbsp - Ginger Chilli Garlic Paste ( From Green Masala )
1/2 tsp - Garam Masala Powder
Salt to taste
2-3 tbsp - Coriander Leaves Chopped
1/2 no - Lemon Juice
Vada Pav Dry Red Chutney:
1 tbsp - Oil
18 - 20 no - Garlic With Skin
1/4 Cup - Peanuts
1 Cup - Papdi
1/4 Cup - Red Chilli Powder
1/3 Cup - Dry Coconut Grated
Green Chutney:
2 Cup - Coriander Leaves Chopped
1/2 Cup - Mint
15-20 no - Green Chillies Spicy
2 inch - Ginger
1/2 no - Lemon Juice
Salt to taste
2 no - Green Chillies Less Spicy
Salt to taste
1/2 Cup - Papdi
2 no - Ice Cube
1 tsp - Black Salt
Assamble :
6 no - Bread Slice ( Cut into Round )
Batter :
1 Cup - Besan
1/2 tbsp - Sugar Powder
Salt to taste
1/4 tsp - Turmeric Powder
3/4 Cup - Water
1 tbsp - Oil
1/2 tbsp - Lemon Juice
3/4 tsp - Eno
Ragda :
1 tbsp - Green Chilli Ginger Paste
Method :
Take a White Peas ,Wash n Soak for 6-7 Hours in Luke Warm Water
Take a Pressure Cooker,add White Soaked Peas and then add Water , Oil , Turmeric Powder, Salt and Mix Properly and Lastly add Baking Soda and Mix Properly and Give 3 Whistle in Cooker
Masala : Take a Mixie Jar and add Green Chillies ,Ginger , Garlic , Grind Coarsely
Take Kadhai and add Oil , Mustard Seeds , Curry Leaves Finely Chopped , Hing , Turmeric Powder. Mix Properly then add Boiled Chopped Potato , Ginger Chilli Garlic Paste , Garam Masala Powder , Salt to taste , Mash from Potato Masher then add Coriander Leaves Chopped and Mix Properly , Lemon Juice,again Mix it and Remove in Plate
Red Garlic Chutney Dry : Take a Kadhai and add Oil Garlic Clove With Skin , Roast Little Golden . Then Put into Mixie Jar , Same Kadhai add Peanut and Roast Little , Put into Jar , Papdi , Red Chilli Powder . same Kadhai Same Oil add
Dry Coconut Grated , Roast Little Golden and Put into Jar .Grind Coarsely
Green Chutney: Take a Mixie Jar and add Coriander , Mint , Green Chillies Spicy , Ginger , Lemon Juice , Green Chillies Less Spicy .Salt to taste , Papdi , Ice Cube Black Salt ,Grind the Chutney
Take a Bread Slice and Make Rounds
Assemble : Take a Steel bowl , apply oil , Put 1 Bread Slice
Apply Green Chutney
Aloo Masala Tikki
Dry Red Chutney
Batter : Take Bowl and add Besan , Sugar Powder , Salt to taste , Turmeric Powder , Mix With Water and Make a Medium Batter , Oil , Lemon Juice and Mix Properly then add Eno
Keep Steamer in Gas , Keep all Ready Bowl then Put above Batter and Stem For 12-15 Min
Ragda : Open Pressure Cooker , Mix and then add Ginger Chilli Paste , Boil Properly
Take a Plate
Put Steam Ulta Vada With Ragda in One Plate , Put Some Green Chutney Sweet Chutney, Onion Chopped Dry Red Garlic Chutney
Serve Hot.
