For Fish & Chips, Lose the Fork

Do fish & chips taste better when eaten with your hands? If so, why do you suppose that is?

Young & Foodish’s Daniel Young, who served as a Ken for a day at Ken’s Fish Bar in Herne Hill, South London, thinks it’s a matter of touch. If you feel the texture, warmth and moisture of the battered cod or haddock with your fingers, it connects you to the fish. The eating experience becomes richer, fuller, deeper, more physical, more familiar, more intimate.

One of the real Kens links the greater appeal of fish and chips liberated from knives and forks to tradition. Wooden chip forks and plastic cutlery are modern conveniences. Back in the day, fish & chips were wrapped for takeaway in newspaper and consumed on the go, with your fingers. There was no need for single-use plastic that would take 200 years to decompose.

As Ken reminds us, you didn’t need a moist towelette to degrease your fingers. You employed a cleansing tool that was built-in at birth for repeated usage and was therefore was friendlier to the environment than Wet Ones.
