Healthy Cajun Chicken Sauce Piquant (No-Bloat Comfort Food Swaps) #Antiinflammatory #GutHealth
This cozy Cajun Chicken Sauce Piquant uses simple ingredient swaps to keep it tasting like the South Louisiana comfort food we grew up with, just without the inflammation.
Ingredients:
* 1.5 lbs chicken (I used boneless skinless thighs)
* Yellow mustard (for binding, check to ensure clean ingredients)
* Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper (all to taste, we go HEAVY)
* A sprinkle of coconut sugar (for browning)
* 1 tbsp avocado oil
* Cajun Trinity: large yellow onion, bell pepper, 2 celery stalks (finely diced)
* 1 can (14.5 oz) fire roasted crushed tomatoes
* 2 cups water
* 2 tbsp clean-label jarred roux & 1 tbsp tomato paste
* Water to adjust consistency (about 1 cup)
Recipe Steps:
1. Prep the chicken: Coat the thighs evenly in yellow mustard to act as a binder, then season generously with all seasonings (to taste).
2. Sear the meat: Heat oil in a heavy Dutch oven over medium-high heat. Sear the chicken with a sprinkle of coconut sugar until golden brown on both sides, then remove and set aside.
3. Sauté the trinity: Toss the blended onion, bell pepper, and celery into the same pot, stirring to scrape up the flavorful browned bits from the bottom.
4. Build the gravy: Stir in the diced tomatoes, water, clean jarred roux, tomato paste, and extra Cajun seasoning, garlic powder, onion powder, and smoked paprika to taste. Stir until smooth.
5. Simmer: Slide the chicken and any juices back into the sauce. Bring to a boil, cover with a tight lid, lower the heat, and simmer for about one hour until the chicken is fall-apart tender.
