Deviled Eggs
Always in demand and good in any season, the venerable deviled egg is a long-standing favorite. There are endless variations of flavors to add into the yolks and top garnishes. This simple yet flavorful version is the one my mom made for years.
6 hard boiled eggs, cut in half lengthwise and yolks removed
2 TBSP mayonnaisse
2 tsp horseradish (or more to taste)
2 tsp prepared yellow mustard
1/4 tsp salt
1/8 tsp pepper
1/2 tsp sugar
paprika
fresh parsley
In a bowl, combine egg yolks, mayonnaise, horseradish, mustard, salt, pepper and sugar and mash and mix together with a dinner fork until smooth. Give mixture a taste and adjust seasoning to taste.
Using a teaspoon, fill egg whites with yolk mixture. Sprinkle top of eggs lightly with paprika and garnish with a piece of fresh parsley. For best results, refrigerate for a couple of hours before serving.
