Crusty Broiled Tomatoes

What's not to love about late summer when the gardens and farms are providing such incredible bounty, like fresh, tasty, summer tomatoes! These are tomatoes that actually taste like tomatoes! I like to just slice and serve with a little seasoning, but there are countless ways to enjoy these tasty summer treats. Here's a way to prepare them as a great size dish or first course.

2 medium ripe tomatoes
1 TSBP Dijon mustard
1/4 tsp salt
1/4 tsp pepper
3 TBSP butter, melted
1 cup soft bread crumbs (best to make these from fresh bread)
1/2 cup grated Parmesan cheese

Pre-heat broiler and position rack about 6 inches from heat.

Cut tomatoes in half (side to side), If they are very ripe or juicy, give them a soft squeeze over a bowl or use a teaspoon to take out any excess liquid or seeds, but do not remove any of the flesh. Spread cut sides with the mustard. Sprinkle with salt and pepper. Place tomatoes on baking sheet.

In a bowl, combine bread crumbs, cheese and melted butter. Using a tablespoon, gently mound crumb topping over the four tomato halves..

Place tomatoes under broiler for 2-4 minutes, or until crumb topping is nicely browned. Serve and enjoy!
