QUICK RAMADAN RECIPES | MINCE MEAT PASTRIES AND SEHRI BURRITO
** I FORGOT TO SHOW THAT I ADDED SALT TO THE MEAT WHEN IT WAS COOKING - DON'T FORGET THE SALT!*
First video back after a LONG baby-related hiatus! Firstly, Ramadan Mubarak! Secondly, this isn’t the usual style for my recipe videos but between balancing baby and being exhausted, I managed to record a few recipes last week!
These recipes are perfect for when you’re short of time/want to prepare beforehand. They are quick and easy, and most importantly, delicious!

MINCE MEAT PASTRIES
Serves 6
INGREDIENTS
½ kg of mince meat
1 tsp garlic paste
1 tsp ginger paste
1 tsp green chutney (green chillies and coriander blitzed)
1 heaped tsp garam masala
1 medium onion, chopped finely
A handful of coriander, chopped
1 green chilli
1 egg, beaten with a little milk
One roll of pastry
METHOD
Add mince to a medium-hot pan with garlic, ginger, and green chutney.
Keep stirring to avoid lumps forming
Once the meat has browned and there is no water, add in garam masala and mix
Add in the chopped onion, coriander, and chilli
Leave to cool
Preheat oven to 180c for fan
Once pastry is at room temperature, roll out and damp one side with wet fingers.
Put the mince on the pastry, not too close to the edges, and drizzle a small amount of the beaten egg on top
Close it up, slice it up, and put a slight egg wash on top.
Place in the oven for 10-12 minutes or until golden.

SEHRI BURRITO
Serves 6
INGREDIENTS
1 pack flour tortillas or gluten free tortillas
Leftover cooked mince meat
Hot sauce (I used masala chilli sauce)
6 eggs
Butter
Salt and pepper
Salsa
Tomatoes
Coriander
Lime juice
Salt
Jalapeños
Cheese, grated
2 cans of black beans, drained and rinsed
2 red peppers, chopped
1 red onion, chopped
2 potatoes, chopped
Olive oil
Garlic salt
METHOD
Preheat oven to 180c.
Place chopped onions, peppers, and potatoes on a foil-lined tray with a glug of olive oil, garlic salt, and pepper.
Put in the oven.
Whilst the vegetables are being roasted, make your salsa of tomatoes, coriander, jalapeños, salt and a twist of lime.
Crack the eggs into a bowl, whisk, and season with salt (and pepper if you like). Add butter into a pan and pour the egg mixture in. Stir to achieve a very slight runny scrambled eggs.
Once vegetables are done, add a layer of spinach on top and put back into the oven for five minutes or once wilted.
Remove the vegetables from the oven, stir, and add the black beans on top. Leave to cool.
Once everything has cooled, assemble your burrito: vegetable and bean mix, chilli sauce, salsa, eggs, mince meat, and most importantly, cheese.
Close up, wrap in foil, and place in the freezer.
To eat from the freezer, you can take it out at iftar time and leave to defrost in the fridge. Place it in the oven on high for five minutes so that the cheese can melt and everything warms up. Alternatively, you can make it at sehri time, where it will take 30 minutes straight from the freezer or 3-5 minutes in the microwave on high (don’t forget to remove the foil!).
