This is a pretty interesting topic to me. I definitely think you can learn more than one language at once. But I tend to prefer studying one at a time, that way I can put all of my energy and efforts into one language and get the most out of my studies. It also depends on what languages you're studying and what your goals are. My goal for Italian was to sound like a native and be perfectly bilingual. My goal is pretty much the same with French. Maybe I don't care that much about sounding like a native as I did back when I was first learning Italian, but I definitely want to sound authentic and have a good accent.
