Party time. Sourdough ("open crumb") pizza recipe :) On the occasion of 1000 subscribers, here is a very simple pizza recipe from the "open crumb" category. Italians, please don't judge me too badly. I am your fan and I will respect your delicious traditional food.
My kiddo tells me that any self-respecting youtuber makes a special event when it comes to round number. So, sourdough (open crumb) pizza time!
Dough formula for 4 pizza:
Flour: 670g (a strong flour helps)
Water: 440g
Salt: 15g
Sourdough starter: 60g
67% total hydration
Mix well toghether, rest for one or two hours. Knead a bit. Then 4-5h proofing at room temp (or alternatively 24 hours in the fridge) . Once leavened, the dough can be frozen and used when you need it.
