MEMORIES OF MACEDONIA ~ KOZINJAK (Macedonian Sweet Bread)
Kozinjak is a sweet bread, normally served at Macedonian Easter, but is good any time of the year! The subtly sweet, fluffy texture of this yeast bread will have you coming back for more!

YOU NEED:
For the Yeast Mixture -
2 sachets of instant dried yeast or 4 tsps.
1/2 tsp. sugar
2 tsps. flour
1/3 cup of milk, warmed (80 ml)
For the Dough -
3 eggs, beaten
2/3 cups sugar (140 gr)
2/3 cups milk (160 ml)
1/3 cup oil (80 ml)
2 tsps. vanilla extract, or 2 sachets vanilla sugar
1 1/2 tsps. grated lemon rind (I used 1 whole lemon)
5 - 6.5 cups of flour, as needed
pinch of salt
extra flour for dusting
cooking spray or oil for coating pan
1 egg, whisked, with a dash of milk for egg wash
sesame seeds or castor sugar for sprinkling on top
butter, melted, to coat
optional - about 1/4 cup of raisins.
