Pasta Carbonara w/ Cured Egg Yolks! | MUKBANG
Today, I made homemade pasta carbonara, with some fresh Tajarin that I got delivered from Rachael's Pasta Delivery in Minneapolis! I also grated some cured egg yolk on top, which I also made! Such a fun video to make, and even more fun to eat -- this is one of my favorite meals!

How I did it:
1. Over medium heat, saute 5 oz guanciale until fat is rendered out.
2. While that's cooking, whisk together 5 egg yolks, 1 whole egg and a cup of parmesan or pecorino.
3. Cook your pasta! Make sure you undercook by a minute or two, depending how chewy you like your pasta, since it will get cooked a bit more in the next step. Save a cup or so of starchy pasta water for next step as well.
4. Turn off the heat on your guanciale, add your pasta in and toss to coat.
5. Add about a quarter cup of pasta water to pan, then spoon egg/cheese mixture on top of pasta.
6. Using tongs, stir vigorously until combined, trying not to let the yolks sit at the bottom of the pan for too long. The yolks will come to temperature from the residual heat of the pasta, making it safe to eat. Add more pasta water as needed to make it more sauce.
7. Plate and top with more grated cheese and grated cured egg yolk! Egg yolk recipe on my TikTok channel. :)
