Homemade Tofu
Recipe:
500g soy bean(soak overnight)
Juice of 1 lemon + 4 tbsp water
1500 ml water
1) Blend the soaked soy beans
2) Press out as much of the milk from it.
3) Straining the soy milk with the cheese cloth.
4) Add In 1500ml water into the soy milk, cook the milk and stirring while heating. Lower the heat when bubbles rise up(remove the bubbles on the top) Simmer for 10 minutes and turn off th heat.
5) Mix the lemon juice and the water, then slowly pour the lemon mixture into the soy milk. Do not stir too much.
6) Let it sit for 15 minutes, meanwhile prepare the tofu mold. Since I don’t have tofu mold so I use steamer for make tofu.
7) Pour the mixture into prepare tofu mold and place a weight to press out the water from the tofu.
8) Wait until the tofu is set about 1 hour.
9) Soak into the water and slowly remove the cheese cloth. The tofu is ready to use.
10) Cut the tofu to your desire shape.

Tau fu fa (Soy milk pudding):
2 tbsp hot water
1/2 tsp glucono delta- lactone(GDL)
1500 ml homemade soy milk
-Mix in GDL into the hot water, pour in hot soy milk and mix well. Set aside for 10 minutes or until set.
(Note* Store bought soy milk is not recommended in this recipe. Because it has additives to improve the taste, it is usually not thick enough to solidify perfectly)
Ginger brown sugar syrup:
1 tbsp ginger juice
150 g palm sugar or jaggery powder
50 g brown sugar
2 pieces of pandan leaves
Combine all ingredients in a saucepan, cook over medium heat. Stir until sugar is melted. Strain the syrup through a sieve and ready to serve with Tau fu fa.
