What I Eat In A Day / Lazy Meals / The Starch solution
What I eat in a day, lazy meals on the starch solution. Some days I am just not in the mood to cook. In this what I eat in day video I will be sharing some very easy recipes that you can make even when you are not feeling up to it and you can still stay true to the starch solution. Recipes and links are below.
EASY PEASY TOAST INGREDIENTS
2 slices gluten free bread toasted (or any that you like)
Oil free hummus: https://www.youtube.com/watch?v=SArqfK-4jts&t=10s
thinly sliced Persian cucumber ( or any that you like)
quartered cherry tomatoes
chopped red onion
arugula
lemon pepper and salt
squeeze of lemon
INSTRUCTIONS:
Spread a generous amount of hummus on both slices
add cucumber
onion
tomato
arugula
then add lemon pepper and salt and squeeze of lemon over the top.
EVERYTHING BUT THE KITCHEN SINK SALAD INGREDIENTS
(ingredients can vary depending on what you have on hand)
mixed greens
frozen roasted corn defrosted
chopped red onion
Persian cucumber chopped
cherry tomatoes cut in half
1/2 cup beans, I used pinto
1/2 cup rice
any leftover veggies, I used steamed broccoli, roasted zucchini and summer squash
Dressing of your choice, I used 3-2-1-dressing.

INSTRUCTIONS:
Add a couple large handfuls of mixed greens and add all the rest of your ingredients.
RICE PAPER "CHICKEN" (ITS VEGAN)
INGREDIENTS:
1 16 oz box extra firm tofu frozen over night and defrosted
1 tsp. red pepper flakes
1 T nutritional yeast
1 T paprika
1 T garlic powder
1 1/2 T dried oregano
1 1/2 tsp salt
1/2 tsp ground turmeric
sheets of rice paper
INSTRUCTIONS
Create the spice mix by stirring together the red pepper flakes, nutritional yeast, paprika, garlic powder, dried oregano, salt, and ground turmeric.
Remove tofu from package, drain and wrap in a dish towel and using your hands press down on the tofu with firm and gently pressure to remove moisture.
Next pull apart the tofu and place the chunks in a bowl.
Add the spice mix and stir until everything is coated.
Next slide a single piece of rice paper into a bowl or warm water for a few seconds and then place on a flat surface and cut in half with kitchen scissors.
Place a piece of tofu on each sheet. Wait until the sheets become pliable. You may have to add more water to the sheet by dipping your fingers into the warm water and letting it drip on the paper and then spreading it around. Once it is soft enough but not to soft you can start rolling the paper from the bottom, tucking in the sides as you go.
Line your air fryer basket with parchment paper and place the rice paper chicken into the basket and make sure they do not touch because they will stick. Air fry @ 390 degrees for 10 minutes. Enjoy with your favorite dipping sauce.
SNACKS;
I had fresh fruit for snacks during the day. Red grapes, cherry plums and plucots.
