Easy Vegan fall Desserts (all pumpkin)..... 3 deserts in 90 mins

I had so much fun making this video!!! TIS PUMPKIN SEASON FOLKS!! I really hope you guys like these recipes if you try them out then tag me on Instagram @jax_fanucci.... I'd love to see what you guys come up with!
preheat oven to 400 F
5 cups chopped pumpkin
2 tbsp coconut oil

bake until tender (about 35 mins if thinly sliced...)

Preheat oven to 375 F or 170F
Recipe 1: Vegan pumpkin pie spice Oat bars
3 cups of oats
1 1/2 tsp baking powder
1 tsp baking soda
2 cups of pureed pumpkin
2 flax eggs (2 tbsp flax seeds with 4 tbsp of water... let sit for 15 min)
1/4 cup agave
2 tbsp coconut sugar
1 table spoon vanilla
1 tablespoon cinnamon or pumpkin pie spice

Mix wet ingredients and dry ingredients separately..... then combine all together and bake for 35 mins

Recipe 2: Vegan pumpkin blondie cake with chocolate chips
1/2 cup of coconut sugar (raw non processed)
2 cups of flour (gluten free, paleo preferably)
1 tsp baking soda
1 tsp baking powder
t tbsp cinnamon or pumpkin pie spice
1/4 cup of coconut oil
1/2 cup of almond milk
3/4 cup of pumpkin puree
2 tsp of vanilla
1/2 cup of vegan dark chocolate chopped into small pieces
1 3/4 cup of almond milk
Mix wet and dry ingredients separately and then blend it all together

Place in the oven for 25 mins next to the oat bars

Recipe 3: Vegan pumpkin pie peanut butter truffles
3/4 cup of pumpkin puree
3 tbsp agave
2 tsp cinnamon or pumpkin pie spice
5 tbsp coconut flour
20 g vanilla protein powder
6 oz raw vegan chocolate
1 tbsp coconut oil

Mix everything except the chocolate and coconut oil... kneed into a dough and roll into golf sized balls. place in the freezer on parchment paper for 10 min to firm up
Meanwhile melt the chocolate with coconut oil in 20 second intervals in the microwave (about 3 cycles). remove pumpkin balls and coat them in the melted chocolate.
place in the freezer for another 10 mins to set and then transfer to the fridge
