Seafood Enchiladas:

1/4 cup butter
1/4 cup flour
1 cup chicken broth
1 can cream chicken soup
1 cup sour cream
1/2 cup salsa
1/8 tsp salt
1 cup cottage cheese, pureed
1 pound shrimp, cooked and cooled, chopped
1 cup crabmeat, drained
1.5 cups shredded monterey jack
1 can chopped green chiles
3T cilantro, chopped

Cook butter and flour together. Add chicken broth and soup, simmer until combined. Add sour cream and salsa and simmer for 1 minute. Add salt. Cool.

Add pureed cottage cheese, shrimp, crab, half of cheese, chiles and cilantro to bowl. Mix throughly and fill enchiladas. Add 3/4 cup sauce to baking pan. Roll enchiladas and place on top. Add remainder of sauce and cheese. Bake at 350 for 40 mins until brown.
