Mac and Cheese:

2.5C uncooked elbow macaroni
6T butter
1/4C flour
1t salt
1t sugar
2 C milk
8 oz Velveeta, cubed
1 1/3C cottage cheese
2/3C sour cream
2C shredded cheddar
1 sleeve crushed ritz crackers

Boil macaroni until al dente then rinse with cold water. Cook 4T butter then whisk with flour and seasonings. Whisk in milk and cook until thickened. Whisk in sour cream and cottage cheese until melted. Whisk in velveeta and 1/2 cheddar cheese. When cheese sauce is smooth mix with macaroni. Pour into greased dish. Mix 2T melted butter with ritz. Sprinkle cheese then crumbs on casserole. Bake at 350 for 40 mins until hot and bubbly.
