Zoe's Coriander Beef with Corn and Mango Salsa

Experience a tantalising fusion of flavours with Zoe Bingley-Pullin's coriander beef, complemented by a vibrant corn and mango salsa that adds a burst of freshness to every bite.

See the recipe below:

Ingredients - Salsa
1 mangoe, peeled, finely chopped
1 corncob, husks removed and cooked
½ small Spanish onion, finely chopped
½ avocado, cut into cubes
½ punnet of cherry tomatoes, cut into quarters
½ lime, juiced
2 tsp. lime zest
1 tbsp. EVO oil
½ tsp. ground cumin
1 garlic clove, crushed

Ingredients - Corriander Beef
300g eye fillet
¼ cup coriander leaves, finely chopped
1 tsp. Murray Rive sea salt
1 tsp. black pepper, ground
2 tbsp. EVO oil for cooking

Method:
In a large bowl add all of the salsa ingredients and gentle toss, leave to marinate for 15 minutes.

In another bowl combine the coriander, sea salt and place each eye fillet in the coriander mixture and cover.

Pre-heated frying pan, on a medium heat, and a little olive oil and cook eye fillet for 2-3 minutes each side, medium-rare.

Serve the eye fillet with a generous spoonful for the mango salsa.
